Probably one of the most iconic performers in my young years along with Michael Jackson was Whitney Houston. Today the music world has suffered another loss. I got the AP update on my phone and my heart just dropped at the news of Whitney Houston’s death, and yes yours truly here teared up.

Cooking With Toni: Chicken Florentine

I am a HUGE fan of Paula Deen such a fan I trucked along with my daughter (1.5 year old at the time) to wait in a gazillion people long line to get a book signed by her.  Ultimately I wasn’t going to be able to get the book signed because she was only there for a certain amount of time.  So me being me marched up to hand my camera to a manager and they took a picture of her for me.  Of course I marched myself up to her sweet husband and got a picture with him too.  She cooks all things Southern, the more butter the better…that should be a phrase of life really!!!  Today I am sharing a recipe I love from her The Lady and Sons, Too cookbook. Well I love pretty much all the recipes in there but this is the one I am sharing today.

Chicken Florentine

Ingredients:

  • Two 10 ounce packages frozen spinach (or chopped broccoli)
  • Two 10 & 3/4 ounce cans cream of mushroom soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup grated sharp cheddar cheese
  • 1/4 cup white wine or sherry
  • 1 tbsp. fresh lemon juice
  • 1 teaspoon curry powder
  • Salt & Pepper
  • 6 cooked chicken breast halves, shredded
  • 1/2 cup grated parmesan
  • 1/2 cup breadcrumbs

Instructions:

  • Cook & drain spinach; set aside
  • In a large bowl, mix together the soup, mayonnaise, sour cream, cheddar cheese, wine, lemon juice, curry powder and salt/pepper to taste.
  • Spread the chicken in a greased 13 x 9 inch casserole.
  • Cover chicken with spinach, then pour the soup mixture over the spinach.
  • Combine parmesan and breadcrumbs.  Sprinkle over the casserole.
  • Bake at 350° for 30 minutes

Now as you can tell from the ingredients this is the true epitome of a southern meal.  I mean come on mayo, sour cream, cheese.  It doesn’t get much more southern than that….well unless you add in the drink choice of a true southerner, sweet tea!  Paula Deen’s recipes are made for taste and trust me your taste buds will thank you.
