When the warm months come in, I love the availability of the fresh fruits and veggies. Unfortunately, my kids are not as happy about the arrival of those two things. Having picky eaters, sometimes it’s a fight to get them to down the veggies. We have spent countless nights watching them gag down one bite (yes we have a one bite rule, they have to take a bite of everything before they can leave the table). Luckily for me, when the veggie on the table is corn, I know there will be no battle. Corn is, hands down, the go to veggie if you ask my kids which they prefer.
When it comes to how they like it, the choose one of two ways…in a bowl or eaten straight off the cob. Add a bit of butter (yes, real butter) and it’s the perfect side dish in their opinion!
For get togethers when you are making snacks/appetizers, why not change up your salsa a bit? Instead of regular, turn in into something like corn & black bean salsa. Just do what I do, make your salsa like normal (you can get my recipe in this post) and then add some fresh corn and black beans for a different taste!
Trying to eat healthy but getting tired of the same old salad toppings? Grill your corn, toss some grilled chicken in some buffalo sauce, add some corn tortilla chips, then add it all to your salad for a healthy and taste bud exploding treat.
Seriously, with fresh corn the possibilities are endless! It really is one of natures greatest gifts (at least to this mom with picky kids).
