I love to eat a good meal, however, sometimes life gets busy my good meal needs to be something quick. When that’s the case I usually end up with a sandwich. Well no more! Today I headed to Sam’s Club on a mission. Find a tasty meal, add a side, and a dessert that can be put together in a moment for those times it’s “Eat and Run”.

I headed through the aisle to pick up some snacks for my kids and to replenish items my cabinets were missing.

There are very few things in life that make me more grumpy than being hungry. However, not always having the time to make a meal due to my busy schedule leaves me one of two options:
A) Go through a fast food restaurant and regret the unhealthy choice later.
B) Throw something together super fast and eat it…which usually ends up being a peanut butter and jelly (or something similar).
This mom gets pretty tired of PB&J so what else can I do but run through a fast food drive through, when I am crunched on time and want something tasty. Thanks to Lean Cuisine and Skinny Cow those days will *hopefully* be few and far between. I made my way to the frozen meals section, I was ready for tasty and healthy! 2013 is going to be the year I take better care of myself and that means treating myself to a yummy lunch daily…without going through the drive through.

Okay, and maybe a dessert too! Skinny Cow Cookies and Cream is one of our favorite ice cream treats and I love that from January-February it is only $8.98 for 20 (down from $9.98)


I was ready to head home and delve into one a Lean Cuisine Asian Meal (comes in a 6 pack for $9.98, down from $11.25) or a Lean Cuisine Italian Favorite (4 pack runs $6.98, down from $7.98) along with my personal side creation, and followed by a sweet and tasty Cookies & Cream Skinny Cow treat! Who says lunch at home is boring!
For my side I chose Garlic Spinach. It’s such a simple side that’s pretty healthy.

Sautéed Spinach
Baby Spinach, washed and cleaned
Minced Garlic
Olive OilSimply pour oil into pan, add spinach and sauté a bit, then add garlic and continue sautéing until spinach cooked.
The garlic really infuses with the oil to make this side dish tasty without needing anything extra.
Before I started cooking the spinach, I put in the spaghetti and meatball lean cuisine in the microwave for 5 minutes. Both were done close to the same time. A tasty and healthy lunch in about 7 minutes is something this busy mom can handle, even on her busiest day.
I always thought healthy was time consuming and not tasty, not the case with Lean Cuisine and Skinny Cow. You can have a meal, side and dessert that are both tasty and done in minutes! Not to mention you get 10 meals (entree and a side) for around $17.00 before taxes which is roughly 1.70 per meal…tell me where else you can eat healthy for that? Soup is my go to lunch meal. I stock up on a variety of healthier soup options (both fresh and frozen) and often augment them by adding in spinach, left over veggies or chopped fresh tomato – maybe a bit of cheese on top.
I spend less time heating the soup then I would of spent ordering and picking up fast food alternative on the way home. those extra add-ins are either there and ready to go, or they aren’t needed.
This just made me really hungry. LOL
